Anantara Eastern Mangroves Abu Dhabi Hotel announces the appointment of a talented new Executive Sous Chef Federico Sanna, who joins the property’s culinary team under Executive Chef Idin Asmitha. With more than 15 years of experience in fine-dining kitchens around the globe, Federico brings a world of Gastronomic influences to Anantara Eastern Mangroves Hotel.

Born and raised on the Italian island of Sardinia, Federico grew up in the family’s restaurant business, exposed to the richly varied cuisines of the Mediterranean, including North African, Middle Eastern and Southern European. The chef has since worked in several esteemed fine-diners across Italy, Switzerland, the UK, the USA, France and  Dubai, perfecting his signature blend of tradition and innovation.

“I’m thrilled to be starting this new chapter at Anantara Eastern Mangroves Abu Dhabi Hotel – not only to share the knowledge and techniques I’ve accrued over the years, but to learn new skills from a distinguished team,” says Federico.

The new Executive Sous Chef will be joining Executive Chef Idin in leading the culinary program at Anantara Eastern Mangroves Hotel, which includes Abu Dhabi’s brunch hotspot Ingredients restaurant and Thai fine-dining restaurant Pachaylen.
